An Amish Classic

Today has been a day of catching up here on my Blog. I'm sorry that I haven't posted, I've been very busy with life. Right now that life consists of getting around on a knee cart. What's a knee cart you ask? Well, it's a handy-dandy little contraption that I can put my knee on and use my other leg to wheel myself around. Why do I need this? Because I broke my left ankle at work last week Wednesday! OUCH!!!!! My ankle is now an assortment of blues, greens and yellows in color, and is encased in this giant boot. I'm thankful that it is a clean break and won't require surgery, and that it's in a boot that I can remove once in a while and let air get to my leg.

My Mom is in town to help me, and I'm so glad that she's here. I'm still trying to remain as independent as possible and get around to do things on my own when I can. It's been almost a week now, and I can honestly say that my ankle is much better today than it was last week. So thankful for some healing!!!!!

Now, if we could only get rid of this snowy weather! My Birthday is in 2 days and I would LOVE for there to not be any snow left. Wishful thinking I'm afraid!

Give this recipe a try on a cool day like today, it won't disappoint!

AMISH CHICKEN & NOODLES

INGREDIENTS:
4 Boneless Chicken Breasts (I used Fresh that I had frozen)
2 Cans Cream of Chicken Soup
1 Stick of Butter
Chicken Broth (30 oz.)
24 oz. Frozen Egg Noodles (Reames)
Italian Seasoning to taste

Cook Chicken, Soup, Butter, Italian Seasoning and Broth in the Crockpot on low for 8 hours (or HIGH for 4-6 hours). Take Chicken out and shred it. Put Chicken back in the Crockpot; add Noodles and cook on Low for 2 hours (or until the Noodles are tender). Stir a few times while cooking. 

I served this over Mashed Potatoes. This is also so yummy as leftovers. It does make a lot of food, just be aware!

So much to be THANKFUL for!!!!

I can hardly believe that Thanksgiving is once again only a day away! How crazy!!!! I have so many things to be thankful for this year.

1. I'm thankful for a loving and faithful Heavenly Father who knows what's best for me!
2. I'm thankful for a loving, God-fearing family, whom I love very much!
3. I'm thankful for a loving, faithful, and encouraging church family!
4. I'm thankful for all of my wonderful friends, near and far. You all are so dear to me!
5.. I'm thankful for a warm home.
6. I'm thank for my health...I've been through a lot in my short 32 years, but I'm still so thankful that I have gone through those things, just so that I can be thankful today!
7. I'm thankful for the encouragement from a friend that came at "just the right time" to push me into being a better, healthier me!

I recently, last week recently, started working out at a local gym. I'm on Day #5 of gym work-outs, but have fit in a few walks outside to keep going. I feel GREAT!!!! I have so much more energy, and it really isn't hard to get up and get my work-out clothes on and hit the gym in the mornings, of course it's nice that I have a friend that will be there with me so we can talk and laugh our way through it all! I have tried losing weight and being healthier in the past and failed miserably...the one thing that I've noticed this time is that I'm serious about it and I WANT as much as I need to stick with it. I was also blessed this morning by meeting Crystal, a girl that works at the front desk at the gym I go to. She and I got to talking and she told me about her ongoing journey and then told me that she is working towards a specific goal weight and that there are Doctors in this area of MI that will perform an excess skin removal surgery for free, that's right FREE only after you've reached and maintained your goal weight for a certain amount of time. The reason that these Doctors do this is to use the skin for grafting of burn patients. When she told me this, and even as I type it, I teared up. Not because I want to have plastic surgery when my weight loss journey is done, I would NEVER do that for vanity's sake...but because of the help, the hope that I could offer others. Those that know my family and the story of my AMAZING cousin, know just how much this thought touches my heart! So, now not only MUST I do this for me, I MUST do this for others in need as well. WOW, the Lord sure knows who to put in your path at the right time! What an AWESOME God we serve!!!! Don't get me wrong, I'm far from being close to being able to do this, but I WILL get there and this will be my focus and determination! I have a huge smile on my face because of the mysterious workings of my Lord!

Now that I've told you my story and what I'm thankful for I'm going to share a recipe of one of the many yummy things we will be having on our Thanksgiving table tomorrow! My parents are coming into town tonight and will be here through the weekend. I'm looking forward to seeing them! Instead of having to do all of the work tomorrow, I decided to prep some food today.

I have never made homemade stuffing before, but this year I decided that I would. I'm amazed at how fast this went together. I will definitely be doing it again!

AWESOME SAUSAGE, APPLE & CRANBERRY STUFFING
INGREDIENTS:
1 1/2 C. Whole Wheat Bread; cubed (I bought the pre-toasted, pre-cubed bread from my local grocery store)
3 3/4 C. White Bread cubed 
1 Lb. Sausage
1 C. Onion; chopped
3/4 C. Celery; chopped
2 1/2 tsp. Dried Sage
1 1/2 tsp. Dried Rosemary
1/2 tsp. Dried Thyme
1 Golden Delicious Apple, cored and chopped
3/4 C. Dried Cranberries
3/4 C. Chicken or Turkey Stock (I used Chicken Stock)
4 Tbsp. Butter; melted

Preheat oven to 350. Spread White and Wheat Bread Cubes in single layer on large baking sheet. Bake for 5 to 7 minutes; until evenly toasted. Remove to large bowl (Since I bought pre-toasted I skipped this step). In a large skillet, cook the Sausage and Onions over medium heat; stirring and breaking up the lumps until evenly browned. Add the Celery, Sage, Rosemary, and Thyme; cook, stirring for 2 minutes to blend the flavors. Pour Sausage Mixture over Bread in bowl. Mix in chopped Apples and Cranberries. Drizzle with Stock and melted Butter. Spoon into serving dish. (I put mine in the fridge for tomorrow.) Bake at 350 for 1 hour.

A Recipe Lost To The Blogosphere...And A Note

I recently posted this recipe, as those that faithfully check my blog will attest...however for some reason it has been lost and not saved. So, I thought that I should post it again.

BROCCOLI HAM RING

INGREDIENTS:
4 Oz. Ham; chopped (1 C.)
1/4 Lb. Broccoli; chopped (1 C.)
1/4 C. Onion; chopped
1/4 C. Fresh Parsley; snipped
1 1/2 C. (6 oz.0 Shredded Swiss or Cheddar Cheese
2 Tbsp. Dijon Mustard
1 tsp. Lemon Juice
2 Pkg. (8 oz. each) Refrigerated Crescent Rolls

Preheat oven to 350. Coarsely chop the Ham, Broccoli and Onion; place in 2 Quart Batter Bowl. Snip Parsley. Add Parsley, Cheese, Mustard, and Lemon Juice to Ham mixture; mix well. To assemble ring, unroll Crescent Dough; separate into 16 triangles. Arrange triangles in a circle on Large Round Stone with wide ends of triangles overlapping in the center and points toward the outside. (There should be a 5-inch diameter opening in center of stone) Using medium Stainless Steel Scoop, scoop Ham mixture evenly onto widest end of each triangle. Bring points of triangles up over filling and tuck under wide ends of dough at center of ring. (Fillling will not be completely covered) Bake 25-30 minutes or until deep golden brown.

You could also change up this recipe and add Chicken, Green or Red Peppers...pretty much make it into anything you'd like!

With it being Memorial Day weekend, I want to say a HUGE THANK-YOU to all of our Service Men an Women, both actively serving and retired. Also thanks to all of those that serve here at home to keep us all safe in the wonderful US of A!!! Thanks to all Firefighters, Police Officers and EMS workers who put their lives on the lines daily to protect the citizens of the US and their rights. Without all of you, we would not have the freedoms that we do. THANK-YOU from the bottom of this girls heart.

I am going to be MIA of sorts for the next week or so...that is, that I won't be doing much cooking of new recipes to post, there is a lot going on around here for the next week. I do promise that if I run across a recipe that sounds good that I will post, but otherwise it will be pretty silent over in this girls world. She really is an EXTREME COUPONER, except she's not as as extreme as some of those crazy people on the TLC show! She posts deals at stores such as Meijer, CVS, Rite-Aid and the likes and she even tells you the purchases she made and how much money she saved! :-) Oh, and gives you some cool websites you can visit to get some free coupons to clip. Anything over the excess of what she and her family need, she donates to local churches and charities to help them out. Most of the time these are items that she's gotten FREE with coupons or for pennies! Her hope is that more people will do the same thing and pay-it-forward. I have used coupons for a long time and I LOVE to save money...her site has given me a few new ideas. I'm getting better at it! I went to Meijer yesterday and had an Mperks coupon for $2 off 20 Yoplait Yogurt and then I had 2 coupons for $0.60 off of 8 and $0.40 off of 6, I was able to combine them all, and since the yogurt was $0.60 each, I was able to get almost 10 yogurts for FREE! Sorry, I've Been MIA!

I have been properly repirmanded, my friends! Today, on Facebook, one of my friends who is also a loyal reader commented on my wall that it's been a week since I've posted....She told me that she reads my blog before she goes to bed at night and that I really needed to post again. I have been planning on posting all day today, so that was good timing! Thanks K. for keeping me on my toes!!! Sometimes I just need a little nudge....

It's really not that I haven't been cooking, it's more the fact that I've just been making some of the things that I have already posted. Well...that and it's now much warmer outside and when that happens we utilize our grill here A LOT more than we do in the winter/colder months. There is just something about food off the grill that just tastes so YUMMY!

I also became an Aunt again, for the 3rd time late last Saturday night! My brother and sister-in-law welcomed their 3rd baby! They are the parents of my two adorable nieces, and have now added and equally adorable baby boy!!! I went and visited him in the hospital on Sunday and got in a little snuggle time...can't wait until I get to hold him again! He is SO stinkin' cute...yes, yes, I know that I might just be a tad bit biased...but I don't care!!!! He was born 2 days before his big sisters 5th Birthday, and he and Mommy were able to return home on Monday to help her celebrate. Aunt Melissa offered to make her a Birthday Cake, seeing as how both Mom & Dad had been busy and this might help them not have to be too busy with Birthday preparations. I made the Strawberry Cake that I previously posted...and I sprayed on some bright PINK frosting for good measure. I also made some Strawberry-Rhubarb Sauce for them...just like our Gramma makes. I can't believe that F. is 5 already...she needs to quit growing so fast! I really enjoy spending time with her and W. and laughing, playing and having a good time. I wouldn't trade being an Aunt for ANYTHING in the world...especially when they tell me..."I love you to the stars and back!"

Tonight is no exception for using the grill. I went to the Big-Top Market just up the street from our house and bought some tasty Brats. This store is known for them. They hand-make a variety of different flavors. My favorite is the Pineapple Brat!

Here are the tasty characters in tonights supper:

We will also be enjoying some Strawberry-Rhubarb Sauce. I called my Gramma B. (My Mom's Mother) up about a month ago and asked her for this recipe. We L O V E Rhubarb over here and I'm always looking for new things to do with it. Just tasting this treat again reminds me of my childhood. When we would visit my Grandparents house, Gramma would always send some of this home with our family. I'm so happy to be able to make it on my own now. Thanks Gramma!

STRAWBERRY-RHUBARB SAUCE
The great thing about this recipe is you can make a large or a small batch. Just scale back the ingredients for a smaller batch.

INGREDIENTS:

8 C. Rhubarb; washed and sliced
1 1/4 C. Sugar
1 Large Container Frozen Strawberries (thawed)
1 Box (6 oz) Strawberry Jello

Put enough water in the bottom of a stock-pot to just cover the bottom of pot. Place Rhubarb in pot and cook on stove-top until the Rhubarb resembles mush. Stir in the sugar (add more to desired taste...but not too much as Jello adds sweetness). Add the Frozen Strawberries and stir. Add the Jello and stir. Allow to cool completely before refrigerating. (If you like it a little more runny, use less Jello. Mine is a medium thickness)

My Friends Beg For These!!! (Worth the Re-post)

These are the simplest things to make, and I'm not sure where Pioneer Woman got the recipe from...but I thank her immensely for having shared it with all of us! It really and truly rocks!!!! These buggers are a hit whenever I bring them anywhere, and I have one friend who says that we are only friends on the days that I will make these and bring them when we all get together! ;-) Wow, I feel SO loved!!!!! Every once in a while I will make them, but now that this particular "friend" might be moving I guess I will have to be nice and make them again before he leaves...especially after the next part of this story...you tell me what you think?!?

I 'attempted' to make Apple Dumplings last night to take with to our friend N's house after evening service at church. I say 'attempted' because I had to have the bro finish the process for me. I am proud to say though that not one drop of blood contaminated any of the food! I thought that it would be best to post this picture and not the more gory ones...See, I can be nice once in a while! ;-) My disclaimer on my Facebook status today reads something like this: "I would like to let everyone know that the Pampered Chef Apple Wedger is indeed EXTREMELY sharp & given the opportunity, it will take a large chunk out of your appendages!!!! I learned this first hand last night while making Apple Dumplings to take to a friends house. OUCH!!!!! My thumb is missing a HUGE chunk & is now wrapped up all safe & sound, & I am now up-to-date on my Tetanus! Woohoo (insert sarcasm here)" I highly recommend that if you own one of these:
that you excercise EXTREME caution when using it, or you could do the same thing that I did! I'm lucky that we have a friend that is a Doctor. He is the one that I was making the dessert for...mainly because he is the one that begs for them so often! He was kind enough to take a look at it (would've needed stitches if I hadn't sheared the skin all the way off), and told me that it was a pretty deep cut (took 3 hours to fully stop bleeding). So, now it's bandaged and I've had a Tetanus shot. Now I just have to keep it clean and dry. But MAN does this sucker hurt!!!! Not to mention that it's my left thumb and I'm left-handed...something about Murphy's Law here, right?!?

Anyway, I've posted this recipe before but thought I'd share it again!

APPLE DUMPLINGS

INGREDIENTS:

3 whole Granny Smith Apples
3 cans (8 Oz. Cans) Crescent Rolls
2 sticks Butter
1-½ C. Sugar
1 tsp. Vanilla
Cinnamon, To Taste
1 can (12 Oz.) Mountain Dew Soda

Cut each apple into 8 slices each. Roll each apple slice in a crescent roll. Place in a 9 x 13 greased pan. You will have to squeeze all of them in! Melt butter, then add sugar and barely stir. Add vanilla, stir, and pour entire mixture over apples. Make sure each one has some of this yummy goodness on it! Pour Mountain Dew around the edges of the pan and down the center of each row. Sprinkle with cinnamon and bake at 350 for 40 minutes. Serve with ice cream, and spoon some of the sweet sauces from the pan over the top.

The bro did a wonderful job of finishing them, and everyone enjoyed them! I hope that you'll give them a try as well...but only at your own risk as they are VERY addicting! You've been warned! :-)

Easter Dinner!

I hope that you all had a very Blessed Easter. Last week on Wednesday, J. and I left to go to our parents home so that I could help my Mom with a garage sale. J. and our Dad had a good time doing things together, and Mom and I had a very nice garage sale. Especially considering that it was her first (and she says ONLY) garage sale in their "new" home! We left to come home on Saturday. We stopped in Birch Run at the outlet mall and found some pretty good deals! We were even able to find a Birthday present for our adorable niece who will be 5 in May! Doesn't get much better than that!!! :-)

When we got home on Saturday I had to run to the local Meijer to get a ham and a few other items for Sunday dinner. Boy was that ever a MISTAKE!!!! I don't think that I have ever seen that parking lot that full! It was a mad house. Luckily enough, I could just jet in and get exactly what I needed and get out without having to fight the crowds too much!

It was just the bro and I here for Easter, but we still had a nice day anyway. We heard 2 wonderful sermons at our church, and I sang Sunday night with our church choir. It was a very nice day around here as well! When we were growing up, there were times that we would travel to Illinois and spend Easter with my Grandparents and Aunt and Uncle and cousins on my Mom's side. We haven't done that in quite a while, so I thought it would be nice to cook a Ham here this year. I made Ham, Sunday Potatoes and Deviled Eggs.

I cooked the Ham in the crock-pot. I put it in Sunday morning before we left for church; set to High. I used toothpicks and cut a Fresh Pineapple into rings and stuck them on it as well. When we came home from church I used a little bit of the Pineapple Juice and some Brown Sugar to make a glaze. I poured that over the top of everything the last hour of cooking. Our dinner turned out great, if I do say so myself!!

We brought the leftover goodness to our friend N.'s house on Sunday night and our friends that were there were able to enjoy the rest of it!

FUN FUN!!!!

Today was an absolutely gorgeous day here and I'm so happy for that. Even though it was a bit chilly, Mr. Sunshine made an appearance for most of the day, and I know that the Vitamin D did me some good!

My parents were in town today. It is always GREAT to get to spend some time with them. My Dad and J. went bowling and did guy stuff, while Mom and I went shopping and ran errands. We went to the Zeeland Bakery, as I had ordered some Soft Rusk!!! I was so excited to get them, and I made Egg Salad (find the recipe in my archives) to enjoy on them! When we got home we each had a half with some Egg Salad and it was DIVINE!!!!!

Mom and I also went and picked up her 6 cupcakes that she won from my Birthday GiveAway! And since they have a Buy 1 Get 1 Half Off going on right now, she was able to get 8! How nice!!!! Oh my do they have some new yummy flavors over at Cupcake By Design! I highly recommend the Luscious Lemon! :-) It is light and moist, and lives up to it's name!!!!

Had A Wonderful Supper!

I need to apologize for not posting in a few days. It has been very busy over here, and last week there were 2 nights that I didn't have to have supper made here. On Wednesday, the bro was sick and spent most of the day hanging out in his room, and it worked out pretty well since there was a Spaghetti Supper at our church to benefit the Senior High Youth Group in raising money for Conference this summer. GOOD JOB everyone, the food was delicious! Then on Friday night the bro and I went to our good friends S & E's house and had an awesome homemade Chicken Pizza, cheese bread, and salad supper with them and their adorable kiddos. "Aunt" Missie and "Uncle" J. then stayed and played and put the kiddos to bed, while their parents went out for a bit. It's always fun to play with the toys, be used as a human jungle-gym and laugh with B & G. The best part is getting all of the hugs and love from them! Can't beat it!!!!

I've also been keeping busy helping a couple from our church that were hit head-on by a drunk driver several weeks ago. They both spent time in a local hospital and at Mary Free Bed Rehabilitation Hospital, but are home now and require 24-hour caretakers to be at their home. It is hard to go from doing everything yourself to having to rely solely on someone (a stranger) to do those things in your own home! This dear couple is making the transition well and they are getting stronger everyday! To God Be The Glory!!!! They are both very lucky to still be alive, and to only have suffered broken bones and no internal injuries at all! Of course, it's no picnic waiting for broken bones to mend. I go over every morning and help them with their daily morning routine and answer any questions they have. I am so happy to be able to help in whatever capacity that I can! It is great to see the smiles on their faces and to do devotions with them each morning! They have really been a blessing to me, and I'm so thankful for that!!! :-)

Today I decided to make an interesting dish for supper! It turned out quite delicious!

BEANS & FRANKS APPLESAUCE BAKE

INGREDIENTS:
1 Tbsp. Vegetable Oil
1/4 C. Onion, chopped
6 Hot Dogs, sliced
1 (28 oz.) Can Baked Beans with Pork
1 C. Applesauce
1 Tbps. Prepared Mustard
2 Tbsp. Ketchup
1/4 tsp. Ground Ginger
3/4 C. Shredded Cheddar Cheese

Preheat the oven to 350 degrees. Heat the oil in a skillet over medium-high heat. Add the onion; cook and stir until starting to brown, then mix in the hot dogs. Fry until browned, then transfer hot dogs and onions to a 2 quart casserole dish. Stir in the baked beans, applesauce, mustard, ketchup and ginger. Top with shredded cheese. Bake uncovered for 30 minutes in the preheated oven, until heated through and cheese is melted and browned.

I hope that you will give this a try, it really was very tasty. The applesauce and mustard gave it just the right amount of sweet and tangy.

It's Not That I Haven't Been Cooking...

It has been a very busy week around here! I can hardly believe that Monday was my birthday and that it's only Thursday today. It has been an extremely busy week!

This is what my Momma posted on my Facebook Wall in honor of my birthday:

'I had issues with my internet Monday and Tuesday so I will post for your birthday today, Wednesday. I wished you a happy birthday(or tried to) and added that if your father had his way your birthday would have been the 22nd! He thought we should wait in the hospital parking lot until midnight so we wouldn't have to pay for less than an hour of actual time in the hospital on the 21st!?!?! However, you were born at 20 minutes to midnight on the 21stand not after midnight on the 22nd:)! By the way, the hospital bill we paid was for $6.00--for a phone in the room---I guess he needed golf money! I know you had a great day!'

I thought that it was pretty amusing! My comment back to her was that I'm so glad that she won out over my ever frugal Father! He wanted to save a few bucks! hahaha But I will say that he reminds me all the time just how happy he was that he had a little girl on March 21st! He tells me that he drove home singing. I'm so thankful that God blessed me with these wonderful Christian parents, and of course my older and younger brothers as well! Life wouldn't be the same without them! All in all I had a FANTASTIC Birthday and I had fun doing the GiveAway's here on my site as well! Congratulations to all who won! :-)

So, it's not that I haven't been cooking this week...because I have been. It's just that some of the recipes I've been using are ones that I've already posted, such as tonight, we had Beef Stew.                                               
You can find the recipe for that under the Main Dish tab on the sidebar. It is a really tasty meal and I highly recommend it. It is so simple and easy to make. Last night we attended the Young People's Spaghetti Supper from church, and supported them in their efforts to raise money for convention this summer. It was delicious---thanks to all that were there and cooked!!!
