I have been busy lately getting ready for the move to the complex where I work. Oh, how I loathe packing boxes and moving...but it's all worth it in the end. I am looking forward to having my own place again. One that I can decorate how I'd like to.
But, in the meantime I have been cooking at home as well. Mom has been here this week, and as a result I have tried some new recipes. Today's lunch was no exception. It was good, but we came up with some ways to improve it. I will post it how I made and then at the bottom I will put what I would do differently the next time I make it.
BAKED TURKEY & CHEDDAR SANDWICHES
INGREDIENTS:
2 C. Original Bisquick Mix
1 C. Milk
1 Egg
4 oz. Sliced Deli Turkey Meat
1 1/2 C. Shredded Cheddar Cheese
10 Slices Pre-cooked Bacon
Heat the oven to 400. Spray and 8x8 pan with cooking spray. Stir together the Bisquick, Milk, and Egg. Pour half of this mixture in the bottom of the pan. Top with Turkey, Bacon and 1 C. Cheddar Cheese. Top with remaining Bisquick Mix. Bake for 29 minutes. Remove and top with remaining 1/2 C. Cheese and bake for 3 additional minutes. Let stand 5 minutes before serving.
WHAT I WOULD DO DIFFERENT:
The next time I make this, I'm going to add about 1/4 C. Brown Sugar to the Bisquick Mix and then serve the sandwiches with a little bit of warmed up Maple Syrup for topping. Since you eat these with a knife and a fork anyway..it doesn't make that much more work. I think that a little bit of sweetness would cut through the dryness of the Bisquick.

A Meal Fit For The Day After Thanksgiving...Or Today!!!
Of course the credit for tonight's delicious supper goes to none other than Pinterest! :) This recipe is designed for all those yummy leftovers from Thanksgiving...but I thought, why not have it tonight! :) It was simple and easy and oh so scrumptious...we all loved it, and I'm sure that you will too!
CUBAN TURKEY PANINI:
INGREDIENTS:

Ingredients:
1 bun (sliced in half) (I used a Crusty French Bread and it worked GREAT!)
1 Tbs. mayonnaise
1 tsp. dijon mustard
1 Tbsp. Cranberry Sauce (I used much more than this! :) )
2 slices Roast Turkey Breast (I used the Carving Board lunch meat kind)
2 slices swiss cheese
2 slices smoked ham
2 slices dill pickle
1 bun (sliced in half) (I used a Crusty French Bread and it worked GREAT!)
1 Tbs. mayonnaise
1 tsp. dijon mustard

Almost feels like we're in Hawaii....
Well, okay, maybe not! But it's worth the thought at least! :-) Especially with the Fall weather that has hit Michigan in the last week. Last night I decided that I just wanted to make something simple and easy for supper. So I pulled out an old favorite.
HAWAIIAN SANDWICHES
INGRDIENTS:
8 Slices of Bread
Mayo
4 Slices Swiss Cheese
Ham for Sandwiches
4 Pineapple Rings
Heat Oven to 350. Spread Mayo on all 8 slices of bread. Top 4 slices of bread with Ham, Cheese and 1 Pineapple Ring. Top each sandwich with another slice of bread. Place on cookie sheet and bake for 10-15 minutes; until cheese is melted and bread is crispy.
This is so yummy! And so easy to make! Always a hit here in this house.
